It's food that happens to be dessert. 30g of highly absorbable, quality protein per cup, built with recovery in mind. It tastes like real gelato, because it is.
Everything on the market was pretending to be a dessert, or pretending to be functional. Never both. We make gelato for a living, so we spent months building the high-protein version, a dessert you can eat every day without thinking twice.
Real Italian gelato. Italian buffalo whey protein. Nothing fake.
Five flavors. 30g of protein in every cup. Full nutrition, nothing hidden.
See the flavorsWhy buffalo whey. Every ingredient explained, what it is, what it does, why we're well below every limit.

Why we made itBranded freezers for gyms and offices. Our stand for events. The trolley for popups.
Partner with usGelatocraft makes the UAE's first and only functional protein gelato: 30g of protein per 150g cupmade with Italian buffalo whey, in real Italian gelato, not a protein bar pretending to be dessert. It's rated 5.0 on Google. See the five flavors.
It's built to be eaten every day. Every cup has 30g of complete, highly absorbable protein, between 310 and 343 kcal, and nothing artificial: no sugar alcohols, no artificial sweeteners, no colorants, no fillers. Every ingredient is a real food ingredient, used well below any regulatory limit, and we publish the full nutrition panel for every flavor. Read what's in the cup.
30g per 150g cup, 20g per 100g, in every flavor. That's roughly the protein of a standard scoop of whey, with the macros of a dessert you'd actually choose.
Italian buffalo whey protein, protected origin, 100% traceable to the batch, tested and certified with no fillers. It's richer in beta-lactoglobulin, the leucine-heavy whey fraction that drives muscle protein synthesis, and we're the only ones in the UAE putting it in gelato. The science.
No. We sweeten with dextrose and unrefined cane sugar: real sugars your body already knows how to digest, the same ones you find in honey and dates. Sugar alcohols and artificial sweeteners are what leave people bloated and gassy; we don't use them.
You can find us on Noon Minutes nationwide. Find us in person at Ripe Market every weekend until the end of May 2027, and at partner gyms like Warehouse Gym in Al Quoz and studios across Dubai.
That's what it was built for. 30g of leucine-rich whey per cup, real carbohydrates to restore glycogen, and the kind of fat content you'd expect from gelato rather than ice cream. Eat it after a session or as the dessert you no longer have to skip.
Yes. We supply a branded freezer and the products on consignment, restock on request, and can create flavors exclusive to your location. Work with us.

Order direct on WhatsAppThrough research and popular demand we create flavors just for you. Some gyms want their own, only available at their location, it drives sales and keeps members coming back.
Every month we also release something timely for the season or an upcoming holiday. Think cinnamon roll and coffee for December, or tahini and dates for Ramadan. We like to experiment, so sometimes we'll just release a limited batch to see how it goes.

There's a difference between low-calorie chemical foam and a real, dense, high-protein gelato built on the same principles as your post-workout shake, just engineered to taste like dessert.
Real dairy, real fats, real sugar, and the same gold-standard proteins you'd find in a high-end supplement.
Eating sugar on an empty stomach causes a sharp blood-sugar spike. Eating the same amount of sugar inside a heavy matrix of fats and proteins produces a much slower, flatter curve.
Because this gelato is built on fiber, real fat and high-quality whey, the sugar absorbs slowly. A 90-calorie chemical diet dessert loaded with maltitol or allulose will hit you harder than this will.
If you train hard, this isn't a cheat meal. It's recovery food in a different format.
We are always on the hunt for unique flavor combinations, and creating the best gelato experience. Each of our flavors have been meticulously engineered to deliver the perfect flavor and texture each time.
Flavors we've retired (for now). Sometimes they come back as a guest drop, keep an eye out.
We want something that's food, but happens to be dessert. We want you to enjoy life, and never have to make 'sacrificial choices' and give up something delicious because it doesn't fit your macros.
Well, what makes a good gelato? Good quality ingredients, and we use the best we can find. This is the whole list, there is no second list.
Independent lab testing keeps finding the same things: protein counts padded with cheap amino acids (amino spiking), heavy metals like lead and cadmium above safe thresholds, and formulas loaded with sugar alcohols and artificial fillers that leave people bloated and gassy.
But we found the answer. Buffalo whey protein.
Italian buffalo milk, protected origin, traceable to the batch. The whey that comes out of it is denser in protein than anything from a cow, and we're the only ones in the UAE putting it in gelato. It's richer in beta-lactoglobulin, the leucine-heavy whey fraction that drives muscle protein synthesis. Tested, certified, no fillers.
What it is, what it does in your gut, and where it sits against the limits. We never publish our exact recipe, but we'll always tell you this much.
Whole milk and fresh cream, the body of any real gelato. We exclusively use Al Ain milk, because we believe in keeping everything as locally sourced as possible for fresh ingredients. No milk powders, no reconstituted dairy.
Dairy is digested in the small intestine. The milk brings some lactose, which is fine for most people; if you're lactose intolerant, this isn't a lactose-free product, but it soon will be. Stay tuned.
There is no limit on milk in a milk product. It's the base, not an additive.
Liquid egg whites, pasteurized for safety. They add complete protein and the structure that holds a gelato together without gums doing all the work.
Egg white is one of the most easily digested proteins there is, no lactose, no fiber, nothing to ferment.
No limit applies. Eggs are a declared allergen, which is why they're on every label.
Whey from Italian buffalo milk, protected origin, traceable to the batch, tested and certified. Buffalo whey is richer in beta-lactoglobulin, the leucine-heavy fraction that drives muscle protein synthesis, which is why we chose it over cow whey.
Whey is a fast-digesting complete protein. As a concentrate it carries a little lactose, so it behaves like the milk it came from. No amino-acid spiking and no fillers, that's what the batch testing is for.
There's no regulatory ceiling on whey as a food. Each cup gives you 30g, inside the 20 to 40g per meal that recovery research consistently points to, not beyond it.
In gelato it does a technical job: it lowers the freezing point so the gelato stays soft and scoopable, with less sweetness than table sugar. In sports nutrition it's the classic fast carbohydrate: dextrose is what you take after training to restore muscle glycogen and bring energy back up quickly, which is exactly where it earns its place in a recovery dessert.
Dextrose is absorbed directly in the small intestine. Nothing to ferment, nothing to bloat.
Dextrose is a sugar, not an additive, so there is no "limit", it's counted in the sugars line we publish for every flavor. The WHO advises keeping free sugars under 10% of daily energy; one cup sits comfortably inside that. (We mean a cup of our gelato, not a cup of dextrose, obviously.)
Minimally processed cane sugar that keeps some of its natural molasses. It sweetens and it builds texture. The sugars in it are the same ones you find in honey and dates: sucrose, glucose and fructose, in food form.
Sucrose is split into glucose and fructose in the small intestine and absorbed. At the amounts in a dessert, there's no fermentation to speak of.
Same as dextrose: a food, counted in the published sugars, no additive limit applies.
Inulin, a soluble fiber extracted from chicory root. It adds body and a touch of sweetness, which lets us use less sugar.
This is the one ingredient that's meant to reach your large intestine: it feeds beneficial bacteria, which is what "prebiotic" means. At high doses, 10g or more in one sitting, inulin can cause gas and bloating.
A lot of brands use it as a filler, and that is what causes bloating and gut discomfort. We keep it well below the limit, at just the right amount to be functional: all the benefits, none of the drawbacks.
A natural fiber milled from the seed of the guar bean. It keeps water bound so ice crystals stay tiny and the gelato stays smooth. It's the "stabilizer" on the label, there's only one.
Guar is a soluble fiber. Gram quantities can bloat, which is why it's famous in fiber supplements rather than desserts.
EFSA re-evaluated guar gum (E412) and found no safety concern at the levels used in food, with no numeric daily limit required. A gelato uses a small fraction of the amounts reviewed, ours well below.
Phospholipids pressed from sunflower seeds. It keeps fat and water blended so the texture is even. Soy-free.
Lecithin is digested like dietary fat; its main component, phosphatidylcholine, is a normal part of your diet from eggs and seeds.
E322. EFSA found no safety concern at reported uses and set no numeric limit. We use it at the tiny levels that emulsification needs.
Salt does three jobs in gelato: it rounds flavor, balances sweetness, and lowers the freezing point a touch.
Sodium is absorbed in the small intestine. Nothing more to it.
We publish sodium per cup, between 120mg and 240mg depending on the flavor. The WHO guideline is under 2,000mg a day, so a cup is a small share of it.
Real chocolate components: cacao mass is the whole bean ground, cocoa powder is the defatted part. No "chocolate flavor".
Cocoa is rich in flavanols and fiber, and a growing body of research links cocoa polyphenols to a healthier gut microbiome. It carries a little natural caffeine and theobromine.
A food, not an additive. The EU sets limits for cadmium in cocoa products; we source cocoa that complies.
Piedmont hazelnut, Bronte pistachio, roasted peanut butter (100% peanuts) and Syrian tahini. Pure pastes, nothing added, no palm oil, no sweeteners.
Healthy fats, fiber and minerals. Nuts and seeds are slow to digest, which is part of why a cup is satisfying.
No limit applies. Hazelnut, pistachio, peanut and sesame are declared allergens and are named on every label.
Real brewed espresso in the Tahini Latte; a black tea infusion with saffron and cardamom in the Salted Karak. No extracts, no flavorings.
Caffeine is absorbed quickly. Cardamom has been used as a digestive for centuries; black tea brings tannins and a little caffeine.
EFSA considers up to 400mg of caffeine a day safe for most adults. One cup carries a small fraction of that.
Nutrition per flavor is published on the Flavors page, kJ, kcal, protein, fat, carbs, sugars, fiber and sodium, per 100g and per 150g cup.
Your members already consume protein products, and desserts. Now they can enjoy both. Here's every way to put protein gelato in front of your people.
We provide a branded Gelatocraft freezer and keep it stocked with 80 to 100 cups across four to five flavors. Moves faster? We stock more. You tell us when to restock, normally next day, and we handle everything else, with a simple monthly statement. Non-exclusive, so it sits alongside whatever you already sell.

For very high-turnover locations. We aim to never keep product more than five days in our freezers, so this one is for places that move.

Perfect for smaller gyms, offices, members clubs, cafés and studios. Plugs in, sits on the counter, sells itself.
A 3×3 branded market stand with its own freezer, built for large multi-day events, the one you'll have seen at Ripe Market every weekend.
Our mobile trolley is made for smaller spaces: one-day events, gym activations, private parties, office launches. It rolls in, serves, and rolls out.

Some gyms want their own flavor, available only at their location. It drives sales and keeps members coming back. We develop it with you, test it, and produce it in small batches. Seasonal specials run monthly alongside the core five.
Tell us a little about where you are and what you're thinking, and we'll come back with the right option. Or email talktothechef@gelatocraft.com.
We'll get back to you within 24 hours, usually faster.

We're Ilaria and James. We train hard. We love food. We love dessert. Something was missing.
Every time we wanted a dessert that was actually delicious and also had useful macros, we came up empty. Everything was pretending to be a dessert, or pretending to be functional. Never both.
We know how to make amazing gelato. So we spent months building the perfect high-protein version: a dessert we can eat every day, without thinking twice.
Real Italian gelato. 30g of buffalo whey protein per cup. No artificial flavors, no colorants, no sugar alcohols, no chemicals. Just the finest ingredients we can find, and a lot of testing.
Born and raised in the north of Italy, Ilaria was raised on gelato, and holds every opinion an Italian is entitled to about what it should be. Dense, served warmer, less air, more flavor.
She's the palate behind every flavor profile: the one who makes sure a protein gelato tastes like gelato first, and the one who sends a batch back when it doesn't.
Born in the Netherlands, raised all over the world, James trains hard and eats harder. He's the reason the macros exist, and the one who refused to accept that "high protein" had to mean "tastes like a supplement".
Gelato chef, recipe developer, and the brand behind every cup you've held. Pretty cool.
Gelato isn't ice cream. It's denser, served warmer, with less air and less fat. Done right, the flavor hits harder and lasts longer, and that doesn't change because there's 30g of protein in the cup.
We refuse shortcuts. Every ingredient is chosen for how it tastes and what it does, never for how cheap it is. Every batch is tested.
Dubai is a city built by people from everywhere, eating from everywhere, and training everywhere. Karak and espresso live on the same street as the gym.
That's our playground. We take Italian gelato craft, run it through the flavor lens of this city, karak, tahini, pistachio, peanut butter, and give it the macros the city actually asks for.
Some of it sounds wild on paper. Then you taste it.
On Noon Minutes nationwide, at Ripe Market every Saturday and Sunday, and in partner gyms across Dubai.
